It's been awhile since I've posted a recipe and so I thought I'd share a recipe I tried over Christmas.
My sister hosted Christmas and is tradition we all brought items to complete the dinner.
I brought Blueberry Drizzle Salad(recipe here)but also wanted to try something new.
So I browsed online and finally decided on a molded gelatin salad I found at allrecipes.com.
But first I had to make sure I still had my tupperware mold I received as a wedding gift 23 years ago and sure enough I did.
I read that molded salads were more popular in the 60's and then also read a few tips, one of which was to spray the mold with nonstick spray before adding the ingredients. I did do that then let the salad sit out on the counter for 10 minutes or so before unmolding.
And here it is:
It stuck a bit in a couple of spots but overall I was happy with how it came out.
And it was quite flavourful, I'd make it again.
Here's the recipe:
2 1/2 cups crushed pineapple, with juice
1 (3 ounce) package orange flavored gelatin
1 (3 ounce) package cream cheese, softened
1 cup chopped pimento
1 cup heavy cream, whipped
1 cup diced celery
1 cup chopped walnuts
In a medium saucepan, heat pineapple and juice over medium heat until boiling. Add gelatin and stir to dissolve. Remove from heat and refrigerate until partially set.
In a small bowl, blend the pimento into the softened cream cheese. Mix the gelatin mixture and cream cheese together, and then fold in the whipped cream, nuts and celery. Pour into a 1 1/2 quart mold and chill until firm

mmm... looks very cool! It so reminded me of the days when my grandmother had made them all the time at family events! They were always very tasty!
Sorry Rosanne.....jello is not jello with 'stuff' in it. I am not a fan.
