Little Red Wagon # 87- Patriotic

Is it really only Wednesday, feels like it should be Friday!

But it is time for another Little Red Wagon challenge and this week Joanne is challenging us to create something patriotic. After struggling a bit for an idea I ended up creating this card for Canada Day:

It turned out not too badly I think, I found the maple leaf stamp in one of my autumn stamp sets and the idea came from there.

Peasant Girls in the Mist

Also known as Scandinavian Apple and Cream Pudding.

This was the dessert at our Danish dinner and it was a definite hit. You can serve it in individual dishes or a larger bowl as I did:

The recipe is from
2 large cooking apples, peeled and cut into chunks
3 tablespoons caster sugar
1 1/2 ounces unsalted butter
3 ounces rye breadcrumbs or 3 ounces brown breadcrumbs
2 ounces soft brown sugar
1/2 teaspoon ground cinnamon
1/2 pint whipping cream or 1/2 pint creme fraiche
4 tablespoons icing sugar
2 teaspoons lemon juice
2 tablespoons toasted hazelnuts, very finely chopped

Put the cubed and peeled apple chunks into a large saucepan with the caster sugar and 2 to 3 tablespoons water.
Cook them over a gentle heat until they are completely tender - stirring them every so often to mash them down. Put them into a bowl to cool.
Melt the butter in a frying pan and add the breadcrumbs and brown sugar.
Saute, stirring constantly over a medium heat until the breadcrumbs are golden brown. Add the cinnamon and stir well. Remove from the heat and allow to cool.
Whip the cream and add the icing sugar & lemon juice.(Or add the icing sugar & lemon juice to the creme fraiche.).
Take a large glass bowl or 4 individual glass bowls and layer the stewed apples, breadcrumbs and cream - ending with a layer of cream.
Scatter with the chopped hazelnuts and serve.
Makes 4 to 6 servings.

Bilfalde Venner

Welcome friends!

This past weekend we got together with Dave and Kathyrn to roughly plan our sightseeing in Copenhagen(scheduled for later this summer). In keeping with the Danish theme, I planned a Danish dinner.

The official flower of Denmark is the marguerite daisy but there were none to be found at the market this past weekend. I did find some flowers similar in look to the daisy and created this table arrangement:

And here's the menu:

Of course we also had Carlsberg beer and with no Danish wines or liquor to be found I served the next best thing, Swedish Orange, very yummy and so easy:

1 1/2 cups Svedka Clementine Vodka
4 cups white cranberry juice
5 clementines, peeled and chopped

Combine these three ingredients in a pitcher, refrigerate. Serve in highball glasses over ice.

The slaw and meatballs were great but I think the favourite was the dessert. Here's the link to the slaw and meatballs recipes, I'll feature the dessert in another post.

Shaved Asparagus Pizza

We've been enjoying asparagus this season and when I found a recipe for shaved asparagus pizza I had to try it.

The recipe is from Tasty Kitchen and uses mozzarella as well as Boursin cheeses, so yummy.

Little Red Wagon Challenge #83

Happy June!

Let's hope our weather is better than what May brought!

This week, for Little Red Wagon,Dee challenged us to create a card based on her sketch. Here's my card:

I took the colours from the rub-on I received in my goodie bag I received at a scrapbooking event last weekend. And I dug into my much ignored cuttlebug folders! And did you notice, no patterned paper, this card was totally made from cardstock scraps!
